Rocky Road Ice Cream is one of those flavors that never really goes out of style. Chocolate base, marshmallows, nuts, chocolate chunks... there's a reason it's been a classic forever.
I've made plenty of chocolate Creami bases before, but I wanted this one to actually taste like rocky road, not just chocolate ice cream with toppings thrown on top.
The secret is in the base: cottage cheese blended smooth with sweetened condensed milk and cocoa gives you a rich, fudgy foundation that holds up to all the mix-ins. Tested it a few times to nail the ratios, and this version is the one.

So Why Is It Called Rocky Road?
This one comes up a lot, so here's the quick version. Rocky road ice cream was created in 1929, right after the stock market crash. The name was meant to reflect the tough road ahead for Americans during the Great Depression... a little heavy for an ice cream flavor, but the ice cream itself was anything but.
Adding marshmallows and nuts to chocolate was a way to make it feel more special at a time when that mattered. Over 90 years later, the combination is still one of the most beloved flavors around.
Why This Rocky Road Creami Hits Different
- Deep, fudgy chocolate base made with real cocoa... no pudding mix, no gums
- Cottage cheese blends completely smooth, so you'd never know it's in there
- All the classic mix-ins in one pint: marshmallows, nuts, and chocolate chunks
- About 10 minutes of active prep, then the freezer does the rest Ingredients you can actually read
- Rich enough to satisfy a serious chocolate craving
Ingredients

- Cottage cheese - blended smooth, it creates a thick, creamy base with a subtle protein boost; you won't taste it at all once it's mixed and frozen. If you're new to cottage cheese bases, the Ninja Creami Beginner's Guide has a good breakdown of how different bases behave
- Sweetened condensed milk - adds sweetness and helps create that dense, scoopable texture; this is key to getting the fudgy quality right
- Half and half - thins the base to the right consistency while keeping it rich; wondering exactly what half and half is and whether you can substitute it? This breakdown covers everything you need to know
- Cocoa powder - use a good quality unsweetened cocoa here; it's the star of the base and a cheap cocoa will taste flat once frozen
- Vanilla extract - rounds out the chocolate and keeps it from tasting one-dimensional
- Salt - small but important; it deepens the chocolate flavor noticeably
Mix-ins (added after spinning)
- Mini marshmallows - mini marshmallows fold in more evenly than regular-sized; they stay soft and chewy straight from the freezer
- Chopped almonds or walnuts - almonds keep it classic; walnuts give you a slightly earthier, more bitter contrast that works well against the sweet base. Either way, chop them roughly so you get texture in every bite
- Chocolate chunks or chips - use chunks if you can; they give you bigger pockets of chocolate throughout the pint
On the cocoa powder: Dutch-process cocoa gives you a smoother, deeper chocolate flavor and is worth using here if you have it. Natural cocoa works too and gives a slightly sharper, more intense chocolate note. Both are great; just use what you have. Compare this to my Old Fashioned Chocolate Ice Cream, which uses a cream-heavy base if you want to see how the two approaches differ.
How to Make Rocky Road Ice Cream

- Blend - Add the cottage cheese, sweetened condensed milk, half and half, cocoa powder, vanilla, and salt to a blender. Blend until completely smooth and creamy, with no cottage cheese lumps left behind. I

- Freeze - Pour the base into your Ninja Creami pint up to the max fill line. Seal it and freeze on a level surface for at least 24 hours.

- Spin - Pull the pint from the freezer and let it sit on the counter for 2 to 3 minutes before installing. Lock it into your Ninja Creami bowl and select the Ice Cream function.

- Respin - If the texture looks crumbly after the first spin, don't panic. Hit Respin once. The cottage cheese base usually comes together beautifully after a respin. If you're still running into texture issues, the Ninja Creami FAQ and Troubleshooting Guide has real fixes for the most common problems.

- Add Mix-Ins - Once the base is smooth, use a spoon to hollow out a well in the center of the pint. Add the mini marshmallows, chopped nuts, and chocolate chunks. Press the lid back on and select the Mix-In function.
- Scoop and Serve - Scoop right away for soft-serve texture, or refreeze for 20 to 30 minutes if you like it firmer.
Mix-Ins and Topping Ideas
The classic three mix-ins are non-negotiable for a real rocky road, but once you've made the base, there's room to play. For a deeper dive into what works well in different Creami recipes, the Guide to Mix-Ins is worth bookmarking.
A few fun directions to take this one:
- Hot fudge swirl — drizzle a tablespoon into the mix-in well before running the Mix-In function for ribbons of fudge throughout the pint
- Coconut flakes — toasted coconut adds a slightly sweet, chewy contrast; it's also what makes Almond Joy Ice Cream so good if you want to go that direction
- Caramel ribbon — a little caramel sauce folded in plays surprisingly well against the deep cocoa base
- Extra marshmallows on top — toast them with a kitchen torch if you want to get dramatic about it
- Crushed graham crackers — adds a s'mores angle that works really well with this base
Serving Size
This recipe is made for the Ninja CREAMi Deluxe, yielding 4 servings per pint.
If you’re using a standard 16-ounce Ninja Creami pint instead of the Deluxe 24-ounce, just use two-thirds of each ingredient. Think of it as filling the pint about the same way. Just a little less of everything.
Tools You’ll Need
- Blender: Makes mixing ingredients effortless.
- Ninja CREAMi Deluxe 11-in-1 Ice Cream & Frozen Treat Maker: The star of the show, perfect for creating creamy, smooth ice cream.
- Ninja Creami Pint Container: The pint container is essential for freezing and churning your ice cream mix.
Recipe Tips That Make a Difference
- Blend the cottage cheese first, on its own. Adding it with everything else at once can leave tiny lumps in the base. Blending it solo for 30 seconds before adding anything else guarantees a completely smooth result.
- Use mini marshmallows, not regular. Full-sized marshmallows don't distribute evenly in the Mix-In function. Mini ones fold in cleanly and you get marshmallow in every scoop.
- Chop the nuts before adding them. Whole almonds or walnuts are too large for the Mix-In function to handle evenly. Rough-chop them first and they'll distribute throughout the pint properly.
- Don't skip the salt. It sounds minor but salt in a chocolate base makes a real difference. It deepens the cocoa flavor without making it taste salty.
- Taste the base before freezing. It should read clearly chocolatey and sweet at the liquid stage. The flavor mellows slightly after freezing, so if it tastes a little bold now, that's right where you want it.
Recipe FAQs
Rocky road was created in 1929, right after the stock market crash. The name was meant to reflect the difficult times ahead for Americans during the Great Depression. Adding marshmallows and nuts to chocolate ice cream made it feel more substantial and special. It's been a classic ever since.
Correct. Once blended smooth and frozen with cocoa powder and sweetened condensed milk, the cottage cheese flavor disappears completely. What it contributes is creaminess and structure, not flavor.
Yes. Swap it for ½ cup softened cream cheese or plain full-fat Greek yogurt. Both work as substitutes and produce a similarly thick, rich base.
The two most common reasons are underfreezing (less than 24 hours) or the cottage cheese not being fully blended smooth before freezing. Make sure to blend the cottage cheese on its own first, then go the full 24 hours. One respin usually corrects any remaining texture issues. For more fixes, check the Ninja Creami FAQ and Troubleshooting Guide.
No. Marshmallows and chocolate chunks added before freezing will freeze solid and can damage the Creami blade. Always add mix-ins after the base is spun, using the Mix-In function.

Jorgeme says
Do the mix-ins hold up ok if I freeze leftovers, or do the marshmallows go weird?
Rose Sioson says
Hello Jorgeme! The mix-ins hold up pretty well! The marshmallows may get a little firmer or chewier after freezing, but they should still taste great. I recommend letting the ice cream sit out for a few minutes before serving leftovers so everything softens up a bit.
