This Rocky Road Ice Cream is a rich, fudgy Ninja Creami treat made with a smooth chocolate cottage cheese base, sweetened condensed milk, marshmallows, nuts, and chocolate chunks. It tastes like classic rocky road in every bite, with plenty of creamy chocolate flavor and crunchy, chewy mix-ins.
Add all base ingredients to a blender. Blend until completely smooth and creamy, with no cottage cheese lumps left.
1 cup half and half, ½ cup cottage cheese, ½ cup sweetened condensed milk, 3 tablespoons unsweetened cocoa powder, ½ teaspoon vanilla extract, pinch salt
Pour into your Ninja Creami pint up to the max fill line. Seal and freeze on a level surface for at least 24 hours.
Let the pint sit at room temperature for 2 to 3 minutes, then lock it into your Ninja Creami and select Ice Cream.
If the texture looks crumbly, select Respin once.
Make a well in the center, add the marshmallows, nuts, and chocolate chunks, then select Mix-In.
¼ cup mini marshmallows, ¼ cup chopped almonds or walnuts, ¼ cup chocolate chunks or chips
Scoop right away, or refreeze for 20 to 30 minutes for firmer scoops.
Notes
Blend until totally smooth. Cottage cheese lumps will not disappear during spinning.
Add mix-ins only after the base is smooth, not before the first spin.
Use mini marshmallows so they distribute better during the Mix-In cycle.
For a softer texture, eat right after spinning. For firmer scoops, freeze briefly after mixing.
