This Ninja Creami vanilla ice cream uses four ingredients: half and half, cottage cheese, sweetened condensed milk, and vanilla. It has no gums or pudding mix, and you won't taste the cottage cheese. Serve it plain or use it as the base for any flavor.
Add the half and half, cottage cheese, sweetened condensed milk, and vanilla to a blender. Blend until completely smooth, with no cottage cheese curds left.
1½ cups Half and Half, ½ cup Cottage Cheese, ½ cup Sweetened Condensed Milk, 2 teaspoons Vanilla Bean Extract
Pour the mixture into a Ninja Creami pint container, keeping it below the max fill line. Cover with the lid and freeze on a level surface for 24 hours, until solid.
Remove the lid, place the pint in the outer bowl, and lock it into the machine. Spin on the Ice Cream setting.
If the ice cream looks crumbly, add 1 to 2 tablespoons of half and half or milk and respin.
Serve right away, or use the Mix-In setting to add cookies, nuts, or other mix-ins.
Notes
Pint size: This recipe is sized for the Ninja Creami Deluxe's 24-ounce pint. For a 16-ounce pint, use two-thirds of each ingredient.
Blend completely: Any cottage cheese curds left in the base will still be there after spinning, so blend until it's fully smooth.
Respinning: This base usually needs at least one respin. Add 1 to 2 tablespoons of half and half or milk before respinning if it's crumbly.
Sweetness: Taste the base before freezing. Cold dulls sweetness, so it should taste slightly sweeter than you want the finished ice cream to be.
Storage: Smooth the top flat and freeze leftovers in the pint with the lid on, for up to 2 to 3 weeks. Respin before serving, or let it sit on the counter for about 10 minutes.
Substitutions: Cream cheese works in place of cottage cheese for a richer, tangier pint. Honey or maple syrup can replace the condensed milk, but the pint will freeze harder.
